PROJECT DETAILS

Title :Comparison of activity of Catechol Oxidase in fruits and vegetables & the effect of Lead Acetate on its activity.
The activity of the fruit enzyme polyphenol oxidase(Catechol Oxidase) was analysed using TNB method.The effect of different temperatures,ph&substrate concentrations were carriedout and findout the optimum conditions.Effect of Lead Acetate was also carriedout.
Results of the present study indicates that varying temperatures,ph and substrate concentration affect the activity of the polyphenol oxidase which is a very important factor of melanin formation. The optimum condition for the activity of the enzyme was, temperature 35 degree celcius,ph 6 & 22mM substrate concentrations of the substrate Catechol. It was also showed that metal chelator like lead acetate minimize its activity by inhibiting its catalytic activity.
